Crispy Skin Chicken Thighs

Ingredients
- 6 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- Salt and black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
Instructions
- Pat chicken thighs completely dry with paper towels. This is non-negotiable for crispy skin.
- Season generously on both sides with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in an oven-safe skillet over medium-high heat. Place chicken skin-side down. Don't touch it for 8-10 minutes until skin is deep golden and releases easily from the pan.
- Flip thighs. Transfer skillet to a 200°C (400°F) oven for 20-25 minutes until internal temp reaches 75°C (165°F).
- Rest for 5 minutes before serving. The skin will keep crackling.
Notes
The secret is starting in a cold-ish pan and being patient. If you try to flip and it sticks, it's not ready. Walk away.
